Corn Dogs

So I’m not a big fan of hot dogs myself but my father loves them. I made these mini corn dogs as a surprise for him on Father’s Day. His face was priceless and they were actually loads better than I thought they’d be. The outside coating was thin and crispy.

Ingredients:

8 All Beef Hot Dogs

1/2 Cup Corn Meal

1/2 Cup Flour

2 Tbs Sugar

1 Tsp Baking Powder

1/8 Tsp Salt

1 Egg

1/2 Cup Milk

Safflower oil, for frying

  • safflower oil is more expensive than regular vegetable oil but it has a higher flash point and is better for you than vegetable oil

Start by whisking together the egg and milk until combined.

Add in the remaining dry ingredients and mix to combine. Make sure not to over mix.

Lay out a cooling rack with paper towels underneath so that the excess oil can drip off and be caught. Pour the batter into a tall glass for easy dipping.

Cut all the hot dogs in half and insert a short lollipop stick 3/4 of the way into the hot dog halves. Heat the safflower oil to 350 °F (177 °C).

Once the oil is at the right temperature dip the hot dogs all the way into the batter. Let some of the excess drip off before transferring to the oil. Hold onto the stick for a few seconds before letting go. This is so the corn dogs don’t sink to the bottom and stick. The oil temperature will drop slightly but don’t worry and don’t turn up the temperature or you could burn the outside and have the inside still cold or raw.

Allow the corn dogs to cook in the oil for 3-5 minutes before moving to the cooling rack. Make sure you don’t over crowd your pot. Fry in batches.

Once cooled they are ready to enjoy!

Serving 2 Mini Corn Dogs

Vanilla Wafers

Yes you read that right, homemade vanilla wafers. Yes I did get on one of my homemade is better kicks lol. These are actually really delicious and super easy to make too.

Ingredients:

7 Oz Flour

3/4 Tsp Baking Powder

1/2 Tsp Salt

4 Oz Butter

3.5 Oz Sugar

1 Egg

4 Tsp Vanilla

1 Tbs Milk

Cream the butter in a mixing bowl. Add in the egg and then the sugar and cream those together.

Next you want to add in the milk and the vanilla. It’ll look like it’s separated slightly but don’t worry because once the flour gets added in it’ll come back together.

Last step is to add in the flour and mix until it’s all combined.

 

Scoop the batter into teaspoon sized balls 35 to a tray. Use the heel of your palm to slightly squish the dough and then chill in the fridge for 10 minutes before baking at 350 °F (177 °C) for 15-20 minutes.

Once finished baking allow them to cool on a wire rack before letting the snacking begin.

Kahlua Truffles

This was the second truffle I made for my Halloween party this year. It’s for the adults only party that happens after the trick or treater’s have all gone home for the night. The coffee liqueur is very subtle but it gives the chocolate a really nice complementary taste.

Ingredients:

9 Oz Dark Chocolate

1 1/2 Tbs Butter

2 Oz Kahlua

1 Oz Heavy Whipping Cream

Sprinkles

**Use sprinkles that reflect whatever you’re making the truffles for.**

Ok so first you want to line a 9X9 pan with parchment paper and then set aside.

Measure out your 9 ounces of chocolate. Add in your butter and microwave for 1 minute stirring after 30 seconds.

While the chocolate is in the microwave measure out the kahlua and the heavy cream.

After chocolate comes out of the microwave put the heavy cream in for 45 seconds. Immediately pour the hot cream over the chocolate. LEAVE IT ALONE FOR EXACTLY 1 MINUTE! Then you can stir it all together.

Pour all that into your 9X9 pan and refrigerate overnight.

Cut your now hardened chocolate into 32 chocolate squares 8X4. I would suggest using plastic gloves that have no powder but if you can’t get those a plastic sandwich bag works too. Use the gloves to roll the squares into truffle balls.

**If chocolate squares get to soft place back into refrigerator for 5 to 10 minutes before continuing**

Roll the truffles in the different sprinkle mixes. Chill for 5-10 minutes before serving.

Chili Truffles

One of my favorite chocolate pairings is chocolate and chili. I made these for a Halloween party because they look so unassuming but that chili heat will sneak right up on you. They do take a little time so be prepared. I would also suggest getting food safe gloves to make rolling the chocolates easier and less messy.

Ingredients:

9 Oz Dark Chocolate

1 1/2 Tbs Butter

3 Oz Heavy Whipping Cream

1 Tsp Ancho Chili Powder

1 Tsp Chili Powder

1 1/2 Tbs Cocoa Powder

1/4 Tsp Cayenne Powder

1 Tsp Sugar Sprinkles

1/2 Tsp Salt

Combine your remaining ingredients in a small dish. You are going to roll the truffles in this as your outside.

Once covered refrigerate for 5-10 minutes just to make sure your chocolate truffles aren’t melting.
